Fall Chilli!

What you will need:

1 bay l leaf

1 tablespoon cumin

1 tablespoon pepper

few pinches of taco seasoning, light sodium

3 large carrots sliced

1 large yellow onion diced

1 jalepeno sliced in half, and then 1/4 inch slices

16 oz cubed butternut squash

16 oz can of black beans

16 oz can of kidney beans

28 oz can of diced tomatoes

2 lbs of hamburger meat

 

What you will do:

Add all ingredients except the onion and meat to a large pot and turn on low simmer.  Meanwhile, in a large pan, sautee onion until lightly brown and translucent, then add to pot.  Next, sautee hamburger meat until cooked, then add to pot.  Raise heat, and cook on low heat for 30 minutes, stirring throughout to ensure no burning on bottom.

Serve over romaine lettuce, which I like because it retains crispiness with the chili.  Add cilantro to taste.  Serve with pinch of cheddar cheese and dollop of light sour cream if desired.
