Chicken Tortilla Soup!

What you will need:

·       1 1/4 lb raw boneless skinless chicken breasts (about 2-3 Breasts)

·       10 oz. diced tomatoes with green chilies

·       14.5 oz. diced tomatoes

·       1 1/2 cups frozen corn thawed

·       1/2 cup black beans, drained & rinsed

·       ½ cup kidney beans, drained & rinsed

·       1 medium onion, diced

·       1 jalapeno, diced

·       2 cloves garlic, minced

·       3 cups of chicken broth

·       1 cup water

·       1 tsp. ground cumin

·       1 tsp. chili powder

·       ½ tsp salt

·       1/4 tsp. black pepper

·       2 tbs taco seasoning, mild

 

Optional toppings: Avocado, cheese, lime, plain greek yogurt, cilantro, salsa, crushed tortilla chips.

·       I used ¼ an avocado, a spoonful of salsa, 2 tbs cheddar cheese and a bunch of cilantro!

What you will do:

1.       Put all the ingredients for the soup into your crock pot. Stir, turn on low, and go about your day. Check back in 6-8 hours.

2.       Before serving, shred the chicken.

3.       Add optional Toppings

4.       Enjoy!
