Zesty Shrimp and Pasta

What you will need:

·       1 box pasta, any kind – or rice.

·       2 tbs olive oil

·       1 and ½ tbs butter

·       4 cloves garlic - Diced

·       1 tomato diced

·       1/3 cup canned diced zesty tomatoes and a few spoonful’s of juice!

·       ¼ cup sliced baby bella

·       1 tbs Red pepper flakes

·       2 tbs parsley (dried) or a handful fresh

·       2 tbs basil (dried) or a handful fresh

·       Salt and Pepper to taste

·       1 tbs oregano

·       1 lb cleaned shrimp

·       1 large handful of spinach

·       Parmesan cheese – a generous handful

·       1 tbs lemon juice

·       1 tbs butter (optional)

What you will do:

Make pasta according to box directions. Can do regular, whole wheat or even rice! Set aside put a touch of butter or oil on top to prevent from sticking. Put the olive oil and butter into a pan on low/medium heat. Add in the diced garlic. Let cook for about 2 minutes until fragrant, be careful not to burn. Add in diced fresh tomato, canned diced “zesty” tomatoes, sliced baby bellas and allow to cook down, about 8 minutes. Mushrooms will shrink in size. While cooking add in parsley, basil, oregano, red pepper flakes, salt and pepper. Then add in 1lb cleaned shrimp and allow to cook – once pink and not translucent add in a large handful of spinach. Give it a toss, then add in the pasta right into the pan. Make sure to add the right amount so that the pasta has a nice coating of “sauce” keeping in mind the pasta will continue to soak up the liquid. Stir around and add in a generous sprinkle of parmesan cheese, 1 tbs of lemon juice and one more tbs butter (optional) mix and serve!
